Danish Red Cabbage

Danish Red Cabbage

½ head red cabbage (2-3 lbs)
4 T. vinegar (I use cider)
½ c. butter
½ c. sugar
1 t. salt
2 T. current jelly (very optional)
1 apple, cubed

  1. Wash cabbage.
  2. Shred (take out inner stalk).
  3. Put in a bowl and sprinkle with vinegar (or will turn brown).
  4. Melt butter in large pan; add sugar and salt.
  5. Add cabbage and cook covered for 15 minutes.
  6. Add apple (and current jelly).
  7. Simmer covered for about 2 hours.

NOTE: Don’t worry when your family comes into the kitchen and says “what stinks”—That smell goes away and almost everyone loves this cabbage!
